Thai Basil Pork over Jasmine Rice

Heat oil in a wok or large skillet over high heat until shimmering.

Add garlic, chiles, and shallot, and stir-fry 30 seconds until fragrant, taking care not to let the garlic burn.

Add ground pork, breaking it into small pieces with a spatula, and cook 5-6 minutes until browned and cooked through.

Stir in fish sauce, brown sugar, and lime juice, and cook 1-2 minutes until the sauce coats the pork and reduces slightly.

Remove from heat and stir in the basil leaves until just wilted from the residual heat of the pan.

Spoon the basil pork over steamed jasmine rice.

Notes

  • Traditional pad krapow is topped with a crispy fried egg — fry it sunny-side up in very hot oil in a separate pan until the edges blister and add it on top if eggs are welcome.
  • Ground chicken or turkey work well in place of pork.
